Paul’s European odyssey winds up in the land of paella, bullfights, sangria and flamenco. In Madrid Paul meets his tempestuous guide Arantxa, who introduces him to a man named Don Justo. The former shepherd and ex-monk has spent the past 50 years building his own cathedral from donated and scavenged materials. Paul does not expect to see much, but he is genuinely stunned to find Don Justo has constructed a full-sized cathedral in the Romanesque style – without support from the church or the local authorities.

Next Paul turns his attention from religion to another Spanish mainstay – bullfighting. He experiences all the gore and pageantry of a bullfight but is even more impressed by the show that follows. He watches on as acrobats leap and dance around the bull and vault over its horns in a series of extraordinary moves. This remarkable sight not only wows the crowd – it also ensures the bull survives.

In Barcelona, Paul meets Hubert, an adrenaline junkie who likes nothing better than jumping from great heights. Paul hates the thought of it, so he waits patiently at the bottom of a huge rock face as Hubert leaps off and flies down to meet him. Elsewhere, in the heart of Catalonia, Paul catches a glimpse of traditional Spain, where time stands still and neighbours support one another – after a fashion. For once, Paul cannot escape becoming involved as he forms the bedrock of a very impressive and very high human tower.

While for many Spain is a holiday destination, it is not that long ago that the country was torn apart by civil war. The shadow of Franco’s rule still looms large and it is hotly debated how best to deal with this past. Should modern Spaniards forget and move on, or do they need to acknowledge the horrors perpetrated generations ago? Arantxa takes Paul to learn about a project to exhume unmarked Civil War mass graves – a project that could reawaken much old bitterness.

Before Paul leaves Arantxa and ends his tour, she has one more piece of advice to impart, and shows Paul how to dance flamenco. Despite not being the most accomplished dancer, Paul is far too polite not to give it a go!
