Food busker recipes


1.5 cups buckwheat flour

2 teaspoons baking powder

1 teaspoon baking soda

Pinch salt

Pinch cinnamon

2 eggs separated, plus 2 additional egg whites for extra lightness

2 Tbsp sugar

1 cup milk

¼ cup water

1 cup plain yogurt

½ cup (1 stick) butter, melted

Extra pats of butter for serving

Heated maple syrup for serving

Whisk together the buckwheat flour, baking powder, baking soda, salt and cinnamon

In a separate bowl beat the egg whites in a bowl, adding the sugar as you go

Whisk the egg yolks, melted butter, yogurt, milk and water, then pour this into the buckwheat flour mixture and stir. Fold in the beaten egg whites, a third at a time.

Pour batter into a hot waffle maker in batches, after greasing with a little butter.

Serve with warmed maple syrup and mix in the coffee, beef pollen, cocoa nibs, blueberries and serve with some sliced banana.


Duck Burger

3 brioche buns

3 eggs

Oil for toasted buns and cooking eggs in

Mayo to dress

Bunch of corriander to dress

Crispy shallots to dress

He’s used some leftover duck, so maybe half a duck, already cooked



Tbsp runny honey

Teaspoon dark soy sauce

Teaspoon rice wine vinegar

1 ½ Tbsp toasted sesame oil

Teaspoon mustard seeds

2 Tbsp toasted sesame seeds

½ teaspoon ground garlic

½ teaspoon ground ginger


Put a little oil on the brioche buns and toast on a griddle until lightly toasted.

In a bowl mix together the honey, soy, rice wine, and sesame oil, toasted sesame seeds, ground garlic and ground ginger and mix together.

In a dry pan lightly toast the mustard seeds until they pop.

As soon as they start popping add the sauce to this pan and immediately take off the heat

Add your duck into the sauce and mix together

Put the pan in a medium-hot oven for five minutes to crisp-up the duck

In a frying pan fry your eggs in a good glug of olive oil, enough to cover surface of the pan. Once cooked, put on greaseproof paper and sprinkle a little salt over.

Now it’s time to build your burger, firstly put a small dollop of mayo on the bun, add the duck, top with the egg and sprinkle some coriander and crispy shallots on the top.
